Egg in a Basket Breakfast Pizza

Why is this a survival recipe?

Egg in a Basket Breakfast Pizza is something that sounds totally random, but tastes amazing and is so versatile. It’s a great, crispy pizza and it’s very simple to make.

My favorite way to make this is shown below with feta, bacon and spinach, but I’ve also added an array of veggies, different cheese, and sometimes I make it with just egg whites.

  • 1 Tortilla
  • 1 Egg
  • 1-2 tsp of Feta Cheese
  • 1/8 cup of Spinach
  • 2 slices of Pre-cooked Bacon, crumbled
  • 1/8 cup of Shredded Cheese
  • Salt/Pepper to taste

Step one: Preheat your oven to 425; crumble your feta and spinach onto your tortilla

Step two: Crumble your bacon and add your shredded cheese

Step three: Crack your egg in the center of the pizza; if you don’t like well done yolks, just use the egg white

Step four: Bake your pizza until the egg white sets on an oven safe plate, for about 20-25 minutes

Step five: Transfer your pizza to a cool plate, season and enjoy

Shredded Cheese Tortilla Pizza

Category: Sophomore Year
Servings: 1 person
Prep-Time:  5 minutes
Cook-Time: 12 minutes

Why is this a survival recipe?

I love pizza, but I hate how heavy and greasy I feel after eating it. When I really feel like plunking myself down on the couch and eating a whole pie, I make this.

I always have tortillas in my pantry, and you can spice up this recipe by adding veggies, pepperoni, cooked chicken, bbq sauce instead of tomato  sauce, any thing you like.

One of my favorite ways is a white pizza with spinach, garlic, and mozzarella cheese.

  • 1 Tortilla
  • 1/4 cup of Shredded Cheese
  • 2 tbsp of Sauce
  • Optional: Toppings of your choice (Fresh tomato, mushrooms, peppers, pepperoni etc)

Step one: Spread your sauce over your tortilla

Step two: Spread your cheese liberally over your tortilla (Add additional toppings here)

Step three: Toast your tortilla at 400 for 12 minutes and dig in

Individual English Muffin Pizzas

Category: Sophomore Year/Vegetarian
Servings: 1 person
Prep-Time:  2 minutes
Cook-Time: 5-10 minutes

Why is this a survival recipe?

Sometimes I’m in the mood for a slice of pizza, but I don’t always want a whole pie. This recipe is great for individual pizzas, a quick snack, or just a way to make a scrumptious meal without all of the work. If you don’t have a toaster, you can always do this right in your oven on a low temperature of around 200.

  • 1 English Muffin
  • 1-2 tbsp Pasta Sauce
  • 1/4 cup Shredded Cheese

Step one: Toast your English Muffin

Step two: Spread your sauce evenly

Step three: Sprinkle on your cheese

Step four: Return the muffin to the toaster until the cheese has melted

Step five: Dig in to your crunchy, cheesy, easy pizza!
